VALENTINE'S SWEET POTATO

PECAN BROWNIES

Fudgy, moist, crunchy on the outside and so deliciously chocolaty! If you want to go double on the chocolate, the cacao cream goes so well with the brownies! Enjoy, perfect to share mhh 𓂃


Makes 16 pieces (you can halve the recipe for 8)

BROWNIES
550 g sweet potato puree (2 sweet potatoes, ca. 900 g total uncooked)
30 ml olive oil
140 g almond butter
2 tsp vanilla bean paste
60 g cacao powder
80 g oats, finely blended into flour
10 g baking powder
1/2 tsp salt
120 ml maple syrup
60 g coconut sugar
150 g pecans
100 g dark chocolate

CACAO CREAM
1 small ripe avocado
60 ml oat milk
30 g cacao powder
60 g coconut sugar
50 g almond butter
1 tsp vanilla bean paste
1 pinch of salt

How to make

  1. Preheat the oven to 200°C convection. Place the sweet potatoes on a baking tray and bake for about 1 hour, or until completely soft when pierced with a knife. Remove from the oven, let cool slightly, peel and add the flesh to a large mixing bowl. Reduce the oven temperature to 180°C convection.

  2. Mash the sweet potato until smooth. Add the olive oil, almond butter, vanilla bean paste and cacao powder, oat flour, baking powder, salt, maple syrup and coconut sugar. Chop the pecans and chocolate into smaller pieces, add 120 g of the pecans and 80 g of the chocolate to the bowl and stir everything together until smooth and evenly combined.

  3. Line a baking tin (ca. 20 x 20 cm) with parchment paper and spread the batter evenly into the tin. Smooth the surface with a spoon, sprinkle the remaining pecans and chocolate on top. Bake in the lower half of the oven for about 50–60 minutes, until set and slightly crispy on the outside.

  4. While the brownies are baking, prepare the cacao cream. Blend the avocado flesh together with the oat milk, cacao powder, coconut sugar, almond butter, vanilla and salt until completely smooth and creamy. Store in the fridge until ready to serve.

  5. Take the brownies out of the oven and let them cool slightly. Slice and enjoy while still a little warm, topped with the cacao cream - or a scoop of ice cream of choice or simply on their own mhh!
